Matachica - Mambo Restuarant

When we travel, we search for restaurants that tell the story of a destination. Mambo Restaurant at Matachica did exactly that. Located five miles north of San Pedro on Ambergris Caye, this open air beachfront dining experience delivered one of the most memorable evenings of our Belize journey.

The adventure begins before you even sit down. On Ambergris Caye, golf carts are the primary mode of transportation, and the sandy ride north sets the tone for an authentic island experience. Guests can also arrive by boat, which we have officially added to our list for next time.

From the moment we arrived, we knew this would be special.

Ambiance and Décor

Mambo is set beneath a sweeping thatched palapa, open to the Caribbean breeze. The design feels organic and elegant at the same time. Natural woods, soft lighting, and unobstructed ocean views create a setting that is romantic without being overly formal.

The sound of the water, the glow of candlelight, and the gentle rhythm of island life combine to create an atmosphere that feels both elevated and relaxed. It is the kind of place where you linger over conversation, where time slows down, and where the setting enhances every bite.

Menu and Drinks

The menu reflects a thoughtful balance between local ingredients and international culinary technique. Chefs Léon Cerredo and Stephen Lighter clearly understand how to showcase Belizean seafood while incorporating refined preparation methods.

The wine list is curated and impressive, especially for the island, featuring bottles that are not easily found elsewhere in Belize.

We began with the Summer Roll, filled with sautéed chicken, shrimp, fresh ginger, sesame, lettuce, cilantro, and Thai style vegetables. The presentation was clean and elegant. The chili dipping sauce added a subtle heat that complemented the freshness of the herbs and seafood.

Food Quality

This is where Mambo truly shines.

Susan’s Seared Tuna was executed beautifully. The exterior had a delicate sear, while the center remained tender and vibrant. The tropical fruit salsa added brightness, and the lemongrass infused rice delivered aromatic depth. The lime ginger sauce was balanced and precise, and the sesame tuiles added both texture and visual flair.

My Deep Blue entrée showcased fried calamari, seared shrimp, scallops, and Caye Caulker crab claw, all resting in a lime and vanilla beurre blanc. The combination may sound bold, but it worked flawlessly. The sauce was silky and nuanced, elevating the seafood without masking its natural sweetness. The crispy shallots added crunch and contrast.

Every element on each plate felt intentional. Nothing was added for decoration alone. Flavor, texture, and presentation were aligned

When prices are not listed on a menu, it signals an elevated dining tier. Mambo is not positioned as a casual beach shack. It is a refined culinary experience. Considering the setting, the ingredient quality, and the precision of execution, we found the value aligned with the experience delivered.

Overall Experience

This was an unforgettable evening. The combination of beachfront elegance, exceptional seafood, thoughtful wine selections, and polished service created a complete dining story.
We would absolutely return, and next time we are arriving by boat at sunset. Mambo represents the evolving sophistication of Belize’s culinary landscape, and it does so with authenticity.
