Fionn MacCool’s Jameson Whisky Tasting & Dinner
We are not whisky drinkers. Let’s start there. We appreciate a well-crafted cocktail. We enjoy a beautiful wine pairing. But whisky has never been something we actively seek out. So when we were invited to attend the Jameson Whisky Dinner at Fionn MacCool’s in Ponte Vedra, we said yes for one reason. Curiosity. If we were going to learn about whisky, we wanted to do it properly. Guided pairings. A chef driven menu. Irish heritage woven into the evening. What we experienced was far more than a tasting. It was a full cultural dinner event. Walking into Fionn MacCool’s feels like stepping into Ireland. Warm wood tones, a lively bar, soccer on the televisions, conversations flowing easily from table to table. This is not a themed restaurant trying to imitate a pub. It feels lived in, welcoming, and community rooted. The kind of place where regulars gather and first timers instantly feel included. The Jameson dinner was thoughtfully paced and beautifully structured. Each course was paired with a different expression of Jameson, with stories shared about the brand’s 1780 origins at Bow Street Distillery in Dublin and its continued production at Midleton Distillery in County Cork. The education never felt forced. It felt like storytelling. We began with venison sliders topped with aged Irish cheddar and arugula, served with crisp potato wedges. These were not dainty bites. They were hearty, deeply flavored, and satisfying. Paired with Jameson Original, we learned how adding just a few drops of water opens the whisky, softening the edges and revealing subtle vanilla notes. That simple moment turned tasting into participation. The second course surprised us most. Perfectly seared sea scallops accompanied blood pudding and were paired with Jameson Orange. Susan immediately gravitated toward this expression. It was bright, approachable, and unexpectedly smooth. We enjoyed it so much we purchased a bottle the next day. The blood pudding, often misunderstood, had a texture reminiscent of cornbread with a rich savory character that complemented the scallops beautifully. Next came jumbo shrimp in a creamy whiskey sauce over wild rice, paired with Jameson Triple Triple. The shrimp were cooked precisely, tender and flavorful, while the sauce delivered richness without heaviness. Then came the course that defined the evening. Braised short ribs paired with Jameson Black Barrel. Fork tender. Perfectly seasoned. Deeply caramelized. The oak and toasted notes of Black Barrel elevated the dish even further. Around our table, conversations paused as everyone took that first bite. We all knew this was the standout. We are awarding the Braised Short Ribs paired with Jameson Black Barrel our Culinary Duo Best of the Best Dish Award. It is rare for a pairing to feel this intentional and this memorable. This was not just excellent food. It was harmony between plate and glass. Dessert closed the evening with sticky toffee pudding and Irish coffee made with Jameson Cold Brew. Bold, warming, and the ideal sweet finish. Beyond the food, what moved us most was the shared experience. Guided dinners like this create connection. Guests laugh, compare tasting notes, and meet new people. It transforms dinner into memory. At 58 out of 60 points, Fionn MacCool’s delivers not just a meal but a curated experience that blends heritage, hospitality, and heart. Even if you are not a whisky person, we were not either, this is an evening worth attending when they do it again.
